The Yellow Box trees from which Malfroys Gold honey is produced grow in the extreme climate of the NSW Central Tablelands at altitudes of 700 to 1,000 metres. Yellow Box trees flower every two to four years over the hot, dry summer months and, when they bloom, the tablelands are alive with their floral, aromatic perfume.
Yellow Box nectar is sweet, light and aromatic and, in pure form, it yields 'a delicate liquid honey with a hay yellow colour, full body, characteristic sweet floral flavour and lingering clean high notes. Yellow Box also has the lowest GI rating of any Australian honey (35)'.
Malfroys Gold Wild Honey
Seasonal, wild honey, unfiltered and cold spun from frames in organically managed hives by the wonderful Tim Malfroy, second generation Apiarist and honey master. No heat above ‘beehive temperature’ is applied in the extracting or bottling stage, thereby retaining all the most nutritious materials and elements.
