The texture of this washed rind from Milawa is divine. Soft but confident in its form, there’s a slight grittiness (used here in the most complimentary way!) to the rind that tops off the flavour of the cheese.
The cheese is smeared with a Brevibacterium Linen brine solution which promotes the intensity of flavour that washed rind cheeses are known for. The wash helps to keep the cheese moist and supple in texture. As it ripens this can become increasingly soft and ‘bulgy’, but not runny.
